This recipe is perfect for The Christmas season! You can make them up for a quick easy breakfast on Christmas day or any time you want a taste of the season. Sprinkle with a little cinnamon and nutmeg for even more flavor!
Yield: 12 Rolls
Prep Time: 15 min
Cook Time: 20 - 25 min
Dough:
2 1/2 C baking mix (such as Bisquick)
2/3 C Milk
2 T Sugar or stevia
Filling:
4 T Sugar or Stevia
2 T Melted butter
1 T Ground Cinnamon
1/4 C Raisins (optional)
1) Preheat the oven to 375 degrees F
2) Line a cupcake pan with liners
3) Combine baking mix, milk, and 2 T sugar in a bowl.
4) Mix until a dough forms.
5) Transfer dough to a surface floured with baking mix. Knead dough 10 times.
6) Roll dough out using a lightly floured rolling pin until it is 1/4-inch thick. (If dough is too sticky dust it with more Bisquick.)
7) Mix together sugar and cinnamon.
8) Spread butter on the rolled out dough and sprinkle sugar and cinnamon (and raisins) evenly onto the rolled out dough.
9) Roll dough in a spiral and cut into 1 1/4" pieces or about 12 even pieces.
10) Place rolls into the prepared muffin pan.
11) Bake in the preheated oven until golden, about 20-25 minutes.

Icing:
1 1/2 C Powdered Sugar
4 T Eggnog
2 T Softened Cream Cheese
Dash of Nutmeg
1) In a medium sized bowl cut powdered sugar and nutmeg into softened cream cheese 1/2 cup at a time until smooth.
2) Once smooth, whisk in Eggnog until creamy
3) Drizzle over warm rolls and enjoy!
