This easy chicken dish is quick and delicious perfect for those nights where dinner needs to be quick Perfect for Instant Pot cooker or similar pressure cooker

Time:
Prep- 15 mins
Cook- 12 mins + pressure release
Total - Under 30 mins
Ingredients:
Dry rub • ¼ tsp coriander • ¼ tsp curry powder • ¼ tsp ancho chili powder Liquid • ½ c brown sugar loosely packed • 2Tbsp marsala • 1Tbsp soy sauce • ¼ c orange maramalade • 8oz mushrooms • 1 bell pepper • 6 boneless chicken thighs
• 1 Tbsp cooking oil or EVOO
• 1 package steam in bag broccoli
• Rice
Directions:
1) Add about 1 Tbsp of cooking oil to pot and turn to saute setting
2) lightly coat chicken thighs in dry rub then saute in instant pot for a couple minutes each side 3) Remove chicken and pour veggies in pan and saute for a couple minutes 4) Put chicken back in and pour over glaze 5) Cook in high pressure for 12 minutes 6) Release at the end of the 12 minutes 7) If needed add some cornstarch (about 1 Tbsp)* to thicken sauce
Serve with rice & steamed broccoli
* Add cornstarch to 1/2 cup warm water and stir completely before adding to pot.
